It did split a bit, I think I didn't heat the milk enough after adding the cream but someone else might know what was the real cause. Everyone always brings a plate of food and I am permanently assigned now to a contribution to the dessert table. This year I chose this Lime and Coconut Layer Cake because its all fluffy and white like a rabbit. It is layers of sponge brushed with malibu and sandwiched together with lime curd with creme fraiche. To coat it is an Italian Meringue with flaked coconut. It seemed to go down very well with the crowd. The long day full of food culminates in a round of Mahjong, my annual dalliance with this addictive game. </div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px;"><br />

I don't want to just pencil something up in a rush but I don't want to neglect everything else in the process. A misread of the recipe to blame, instead of 3 egg whites and 3 eggs I just used used 3 eggs splitting the yolks and whites and put the odd consistency down to the fact I was making mine a nut free version without the almond meal. Second time round though it worked fine. </div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px; min-height: 14.0px;"><br />

</div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px;">By the time I came to fillings I had run out of eggs due to the earlier errors so I ad-libbed with a caramel base and the leftover yolks made a custard. I also made a lovely apricot jelly salpicon which turned out well, some when into the middle and some little shapes were also cut from it to decorate the tops. I had issues with my caramel, forgot to put down wax paper so it glued itself to the plate and I had to wrestle it off without damaging the cake, a delicate blowtorch and yanking operation later they were extracted but there was some damage to the sponge so they were prone to springing a leak when the custard came in - the custard also refused to set for some reason so I lost all the intended layering effect inside but it was a good learning experience and I feel more confident that next time I'll do it better.</div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px;"><br />

I took some green prawns and simmered them in the pan with some diced tomatoes (a little larger than cherry tomatoes but not as big as your average one), chopped fresh coriander stems and olive oil. I only really got one or two successful dumplings out of this first batch as I didn't let my prawns and sauce cool down sufficiently before making them and I had a few issues with the heat melting holes in my dumplings.</div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px;"><br />

Added to this was small little pieces of flathead fillet and then some fresh diced chives added at the end when wrapping the up. I tried making some chocolate fondant but had some issues working with it so only got one covered whilst the others waited in the freezer. I wasn't very organised and with the headaches of spans of time evaporating infront of me I didn't have much idea of what to do with my freezer abandoned petite fours which I wasn't sure would still be very tasty after three + weeks so I whacked on some leftover moscavado cream from another dessert and piped some icing over them without much thought really but its past the deadline and I just need to get something up however poorly styled it is. I would not only have to make two icecreams when I have never attempted ice-cream before it would also require a swiss roll - again something I've not tried to do before and construct it all together... anyway... it seemed daunting but once I started bit by bit I got there and it tasted yummy and I think it would make it a good celebration cake for certain occasions so its good to have it in my repertoire of skills now. </div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px; min-height: 14.0px;"><br />

I softly caramelised the pears and mashed them up a little but not too finely so that it retained a nice chunky texture before blending in my custard and extra milk to make my icecream gelato creation. When I rolled the final roll I thought it would never set in time but I whacked it in the freezer and it helped make it much easier to slice into neat rolls to line my mould. The rolls were a lot easier than I predicted and I had no issues with cracking which was good.</div><div style="font: 12.0px Helvetica; line-height: 14.0px; margin: 0.0px 0.0px 11.0px 0.0px;">My fudgy caramel bits kind of ran everywhere else spilling out of the sides and centre once cut but it tasted good and my fiancee preferred to dig into this over the box of zumbo cakes purchased that day also (please don't ask why he thought it was a good idea to line up on the first weekend after a masterchef appearance by the pasty maestro particularly considering I had made a whole ice-cream cake to serve for tour de france watching time but I don't pretend to entirely understand the male psyche)</div><div style="font: 12.0px Helvetica; line-height: 14.0px; margin: 0.0px 0.0px 11.0px 0.0px;">Finally I would like to give thanks to my Japser Conran Waterford Crystal Bowl for bravely making the dangerous journey into the freezer to make my bombe the arcing conical pyramid it is. Just a note with the spanish onions I lightly poached these for just a minute or two in some sugared water just to take a little of the sharpness off them as my fiancee hates raw onion and I'm not that keen on it either, remember to just do this very lightly as you still what the crispy zest of the onion and its just to take the edge off.</div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px;"><br />

I make two at a time, one for his family and one for me to keep. The first year was the pig and since then there has been a rat a cow and now a tiger.</div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px;">In the first year I just traced over a papercut out from a reference book I had but since then I have been slowly adapting the designs. This year is my most original piece. I took from the book the basic outline of the tiger though changed the bottom of it to grasses as I didn't like the original design of wheels. I also didn't like the way the original design just had lots of flowers and odd circular cuts. I threw all of that out and went for a striking zigzag style instead. </div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px;">Lots of fine cutting with a scalpel later and I have my brand new tiger to add to the collection...</div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px; min-height: 14.0px;"><br />

It's the one thing I miss most, I can live without a printer easily but not a scanner, the one at works not connected to my computer and its a hassle waiting for that person to leave work or not be busy in order to do anything. </div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px;">So for this feast I created a spread of canapes around my penguin inspired advent calendar (the orange, blue and black thing at the back). Food included cherry tomatoes stuffed with goats cheese and cranberries, oven roasted oregano sea salt pita crisps (oh so simple but very nice, just store bought pita bread cut into triangles brushed with olive oil and sprinkled with salt, pepper and oregano and laid on a baking tray in the oven for 5-10 minutes to crisp up very nicely). There was little tartlets filled with tuna, cucumber and lime and another with roasted eggplant, sundried tomatoes and serrano ham. I had a cheese platter with a lovely French goats cheese rolled in herbs and an Italian pecorino matured in honey and hay. I made a cauliflower, cheddar and tuna dip (just those three ingredients whizzed round to creamy purree and seasoned). There was cucumber rounds filled with hummus (very tasty leftovers from a friend who made it themselves) and salami. Then there was a decadent salad in Christmas flavours, the base is chicken poached in galangal, kaffir lime leaves, ras el hanout and a touch of chilli, that was then shredded and combined with snowpeas, asparagus, cherry tomatoes, coriander, fennel, roasted potato and sweet potato and caramelised red onions.<br />

</div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px;">Dessert was a special, I had made my gingerbread cake the week before for a barbeque and had some left over which I crumbled up into the base of trifle glasses and then added a splash of rum, grand marnier, morello cherries and a chocolate hazlenut cream poured over the top to make little Christmas flavoured trifles. I even toasted my own hazlenuts for the cream component.<br />

No lights or tinsel here either, each decoration has been collected throughout my life and travels. Every baubel hanging on there is different and interesting and is attached to a memory from my past. Well finally I am officially engaged. I was asked to get out of the car and go down to the Pier. Along the way I passed three ladies who commented on my rather glam appearance for an afternoon stroll and I just blushed and mumbled something about being led on a mystery tour led by my boyfriend, they smiled and nodded and went on their way and I stood at the pier waiting.<br />

Well Wednesday the 9th of the 9th 09 heralded the wedding of my friend from university Maz and her boyfriend Mark. (He likes numbers and proposed on the 8th of the 8th 08) It was a lovely wedding at one of Sydney's prettiest churches - St Marks Anglican Church in Vaucluse. The reception was held in the church gardens on a sunny spring day with views to the harbour. There was sparkling pink moscato to drink and the canapes that floated around were enjoyable. </div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px; min-height: 14.0px;"></div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px;">I particularly loved how she had set the gardens up for the wedding and she used the bonbonnerie gifts of little basil herb pots very well to add layers of colour and texture, it was a design element that worked well for their low budget and I for one am grateful for the delicious addition to my balcony's herb patch. The gifts table and cake table were also very charming, I just love all the old wooden tables. Overall this wedding was such a classic English Garden Wedding.<br />

<span class="Apple-style-span" style="font-size: x-small;">It is my friends wedding next Wednesday morning and I have bought her a nice bison ceramic salad bowl in a pretty sagey green colour with wooden salad servers. Lately I have gone off purchasing wrapping paper, the designs are either boring or horrendously expensive and just not in my budget but the time the present is purchased. I have a big roll of brown paper I'm using as a base for everything and I just wrap it in an unusual style with odd folded flaps or oragami flourishes at the end, then I can wrap ribbons round it or stick a small bit of feature paper from my supplies to it. For a wedding though something special is required so I dug out my roll of Chinese Silk Paper and paints and did a brush painting of some blue flowers... I forgot I was going to put yellow centres on them once they had dried and in the confusion I wrapped the present before going "oops" I still think it looks find though. </span></span></span><br />

Saturday started off simply enough with a walk down to the Kings Cross Markets for breakfast and some stops at the fruit and veg, deli, supermarket aisles. On the way back, the cake shop had miniature croquemboche's for sale so this was perfect, a little tower of decadence to carry carefully home and enjoy on the balcony in the afternoon. There was also a little mini bottle of Möet that I had been saving for an occasion and so this too was shared. A simple celebration but quite fine and dandy indeed. </div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px; min-height: 14.0px;"><br />
</div><div style="font: 12.0px Helvetica; margin: 0.0px 0.0px 0.0px 0.0px;">On Sunday I had my Grandmother over for afternoon but as usual forgot to photograph my creations. I made leaf shaped honey and lavendar madeline cakes, crackers with english cloth bound cheddar cheese, another with a lovely soft french chevre with Italian proscuitto and a broadbean and mint purree with pork and fennel salami. I also made these cute little cupcakes that are inspired by the concept of a fruit custard tart. You make the basic vanilla cupcake recipe, scoop out a bit in a centre, fill with custard (home made from scratch, no powder involved) and then topped with some fruits (strawberries, blueberries and golden kiwi fruit) and glazed with a little melted strawberry and vanilla jam. I was running late though and rushing at the end to have everything laid out so the doorbell rang before I could photoshoot it. All I had left was two dodgy ones at the end of the day to remind me of the occasion. On the base is a pancake/fritter consisting of pulverised corn and fennel mixed in with a thick pancake batter to make a nice hearty fritter. On top of that is some shredded chicken which I poached in water with a teaspoon of ras el hanout spice mix to give it a delicate yet rich flavour. Then scattered on top is some pistachio nuts, toasted pine nuts, cranberries and coriander leaves. On road testing this got full marks for taste and flavour and I rather like the beautiful colours in with its jewels of red and green on a golden base. I have always thought there was something quite magical about this particular flower that I have loved ever since I was a small child. </p> <p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Helvetica; min-height: 14.0px"><br /></p> <p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Helvetica">In amongst the branches of the tree houses that formed my early life my friends and I were enthralled with the world of Cecily Mary Barker's flower fairies, we each had our different favourites and mine was not the more popular rose, lavender or sweetpea, nor was it the bright columbine or fuscia flowers my friend adored. My favourite was the snowdrop along with the willow and gentle forget-me-not. Even as a child I was more of an introvert who preferred to reflect quietly along the river banks than frolic around in bright colours with the other fairies. </p> <p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Helvetica; min-height: 14.0px"><br /></p> <p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Helvetica">The snowdrop is a flower that is delicate yet tenacious. It's flowers are fragile, quivering little white bells on the end of bright green stems. From a design perspective they are nicely balanced with the stem colour being carried through into the delicate spotting design along the petals edge. They crush easily, wilt easily but they are strong and determined little things popping up when it's still a bit cold and taking those first steps into spring. I took them to heart as a metaphor, I can cope with the cold and desolation when things are not always rosey. I may be fragile in some ways but strong in others. It appears as a lonely flower sometimes yet its role is also a herald for better times ahead. I am not an obvious beauty yet if you peer closely and can appreciate the subtleties then yes beauty is definitely to be found there. Of course it is not a complete metaphor by any degree, but rather a sliver of a whole.</p> <p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Helvetica; min-height: 14.0px"><br /></p> <p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Helvetica">So it was with great joy when I went home to check on mum and dads place while they were away, to clear the letterbox and sweep the fallen camellias from the drive, that I spotted these lovely little darlings springing up at the base of the old magnolia tree. Again this is part of their beauty, growing up at the base of a tree, adding that little splash of green and dashing flair to the trunk of a tree whose own magnificence is further upwards. I brought some of them home with me and popped them into a humble glass bottle. As I sit here drink my tea they do indeed still bring a smile to my face thinking of their beauty and the memories they conjure up for me of idyllic days amongst the garden beds. </p><p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Helvetica"><br /></p><p style="margin: 0.0px 0.0px 0.0px 0.0px; font: 12.0px Helvetica">I had forgotten the beauty of these flowers in many ways, I guess I wished to distance myself from the struggles of childhood, to reach forward into new things, at the florist I would select something different and unusual, a striking native or an amusing broccoli-like creation. Orchids and other exotics would grab my attention and I had no time for the humble snowdrop. Now though I am willing to embrace it again, to enjoy my rediscovery of it. I guess in ways too that I have settled now into my new life and am comfortable embracing the old, perhaps also it is a hint I am beginning to feel ready to start thinking about children and how I will guide them into life. </p>Elkhttp://www.blogger.com/profile/12742903389296438624noreply@blogger.com0
